docs: document the --json output contract in the README

Adds a short "JSON output" section listing the commands that accept --json
and stating the stability expectation: every payload carries schema_version
(currently 1), changes within a version are additive, consumers should ignore
unrecognized keys, and a removal or rename bumps the version. Previously that
rule lived only in the utils/json_output.py docstring.

Also notes the env-info caveat: it reports host state, so values vary by
machine and the docker, cuda_gpu, and git sections are null when unavailable.
