fix windows build: split probeMount by GOOS

syscall.Statfs / syscall.Statfs_t are Unix-only. Extract the mount-liveness
probe into a small probeMount helper with build-tag-split implementations:

  - nodeserver_unix.go   (!windows): syscall.Statfs, no data-plane call
  - nodeserver_windows.go (windows): os.Lstat fallback (no FUSE on Windows)
