Update GUI example image for README

Add a new general GUI example image for use in the README and documentation homepages. This image shows the latest updates to the GUI (e.g. plot spectrum button), and can easily be updated if/when any major GUI updates are made. Deliberately took the screenshot with the cursor over the plot to include the helpful tooltip passively explaining some of the extra GUI functionality.

The previous example image (gui_fitting.png) is left unchanged for consistency with other screenshots in the GUI examples docs page (though they can all be updated at some point).
