fix(test): mock ISingleClientProxy instead of IClientProxy

.NET 10 IHubClients.Client returns ISingleClientProxy, not
IClientProxy. Casting Mock of IClientProxy to ISingleClientProxy
throws InvalidCastException at runtime, caught by
SendTextToClientAsync try/catch, silently returns false. Mock
ISingleClientProxy directly (extends IClientProxy so
SendCoreAsync setup works). Also removed factory lambda on
hub.Clients — create mock once for stability.
