docs: replicate NodeClaim conceptual documentation across all doc versions

Copies the NodeClaim intro paragraph and API reference section added to
v1.12 into docs, preview, v1.0, v1.10, and v1.11. The v1.0 conditions
table omits the Drained and VolumesDetached conditions, which were not
introduced until v1.10.
