test: raise unit coverage above 60% (#26)

Add unit tests (no production code changes) covering value objects,
views, view factories, factories, change trackers, the attendance
table managers, the HasLogger trait, and the Location, PrivacyPolicy
and IntergroupMeeting repositories. Line coverage rises from ~25% to
61%.

Also adds a global Sentinel_Log_Channel stub to tests/stubs so the
HasLogger wp_log-present path can be exercised.
