rust: message_sign messageText field + WC respondError unknown-topic without start

Two divergences surfaced by the Dart suite once earlier fixes let those
tests run further:

- message_sign values now carry messageText (Go utf8Text: the printable
  UTF-8 form of the message), which the host/Dart reads for the sign
  sheet. Added to personal_sign, mpurse_signMessage, solana_signMessage.
- WalletConnect:respondError now validates the topic against the session
  store BEFORE requiring a started manager, so an unknown topic yields
  'unknown topic' even when WC isn't started (matches Go RespondSessionError)
  instead of 'walletconnect not started'.

With these, the Dart standard integration suite passes 64/64 against the
Rust cdylib — matching the Go baseline.
