feat: add bb_serialize_desc wire primitives for 6 egress producers (B1-1045 PR-2) (#928)

Composition-root ownership decision (KB 1454): each producer gains a
public bb_serialize_desc_t + plain-typed gather fn + host shape-parity
tests, but never calls bb_data_bind() itself -- PR-4's composition root
owns wiring these descriptors into bb_data. Purely additive/inert: no
bb_data_bind/bb_data_http_attach/bb_data_touch calls anywhere, no
bb_event_post removed or reordered.

- log (bb_log_event): single-field JSON-string passthrough descriptor;
  ESP-IDF-only stash written immediately after the existing
  bb_event_post() call
- ota.progress (bb_ota_hooks): portable gather/desc, shared
  phase-name mapping reused by bb_ota_progress_json() and gather
- health.stack (bb_health): widened wire struct, stash mirrored at
  both existing publish sites
- diag.boot (bb_diag): full newest-first reboot_history ring
  materialization + precomputed age_s/age_s_valid present-gate
- health.display (bb_display): widened wire struct, present-gated
  fields
- update.available (bb_ota_check): reuses bb_ota_check_snap_t
  directly (relocated to a new public header, no widening needed)
