fix(employee): surface Location header instead of a nonexistent response body

POST /employees returns 201 with no body per the real API; the created
employee is identifiable only via the Location header. Employee.add/2
now opts into the HTTP client's new expose_headers option and returns
{:ok, %{"location" => url}}.
