refactor!: rename topic selector to topic matcher

The protocol spec renamed the "topic selector" concept to "topic matcher"
(v8 keeps the old term only for migration). Align the codebase: rename
TopicSelectorStore and its constructor, option, default-size constant,
transport interface, files, error strings and the standalone-server flag help.

Also simplify the Caddy cache config: drop the unused sharded cache fields
(MaxEntriesPerShard, ShardCount, CacheShardSize) and the nested `cache` object
in favor of a single `topic_matcher_cache_size` field, and rename the
`topic_selector_cache` Caddyfile directive to `topic_matcher_cache`. This also
makes a negative value correctly disable the cache.

Comments that describe v8-specific behavior keep the "selector" term, which is
what v8 calls it. Removes the stale mercure_topic_selector_cache_* metric row
from the docs (no such metric is emitted).

BREAKING CHANGE: the TopicSelector* exported API, the topic_selector_cache
Caddyfile directive, and the JSON `cache` config object are renamed/removed.
