refactor: dispatch bb_cache_serialize render through the format registry (B1-981) (#885)

- reshape bb_serialize_format_entry_t from an unbound emit-vtable template
  to a one-shot bb_serialize_render_fn, eliminating the NULL-ctx footgun
- rename bb_serialize_format_get_emit -> get_render; add the
  bb_serialize_format_render() convenience wrapper
- bb_serialize_json registers bb_serialize_json_render itself, no more
  template copy/rebind dance
- bb_cache_serialize's hardcoded BB_FORMAT_JSON gate now looks up the
  render fn via the registry; drop bb_serialize_json from its REQUIRES
