refactor(type): allow `insertOne` to return `undefined`

Update `insertOne` return type in `Querier` and `UniversalQuerier`
interfaces to include `undefined`. This accounts for database
engines like MySQL or SQLite where the ID cannot be determined
for non-auto-increment keys during certain operations.
