Drop pip Dependabot ecosystem; uv already covers pyproject.toml

The pip and uv ecosystems both pointed at "/" and parsed the same
pyproject.toml, so every Python dependency bump opened two identical PRs
(e.g. the twin cmake 4.4.0 PRs #9/#10). This project is uv-managed, so the
uv ecosystem covers all of pyproject.toml on its own. Removing the
redundant pip entry stops the duplicates.
