ci: check out main (not the pushed tag) before creating the GitHub Release

The changelog job commits the regenerated CHANGELOG.md to main after
the tag was pushed, so the tag's tree still has the stale changelog.
The release job's checkout defaulted to the tag ref, so
actions/create-release picked up the old CHANGELOG.md as the release
body. Checking out main instead picks up the just-generated file.
