docs: align docs site with v2 kit (#56)

* docs: add example mirrors to docs build

- Upgrade docs-kit to 2026.7.2 for example mirror generation
- Add mirror metadata to the live examples without changing their UI
- Align the docs Vite config with the newer docs-kit plugin shape

* docs: adopt v2 docs shell and demo manifest

- Move example components under slugged demos folders
- Generate docs-kit demo loaders for example source panels
- Switch home, docs, and examples routes to v2 header/footer shells

* docs: align examples index with v2 styling

- Replace the examples card grid with the docs-kit BrutIndexV2 pattern
- Import the v2 brutalist/prose styles and matching font packages

* docs: redirect docs root to getting started
