refactor(postgrest): inject clock explicitly into PostgrestBuilder (#1103)

PostgrestBuilder's retry loop read the DEBUG-settable global `_clock`
directly, coupling it to ambient state instead of an injected
dependency. Thread a `clock: any Clock<Duration>` from PostgrestClient
down through PostgrestBuilder's initializer instead, defaulting to
ContinuousClock() at the public API boundary so no public signature
changes. `schema(_:)` propagates the same clock when it rebuilds the
client. Tests now construct PostgrestClient with an explicit TestClock
instead of mutating the shared global in setUp/tearDown.

Part of the broader _clock removal tracked in SDK-1227; Realtime's
clock DI (withTimeout, ChannelStateManager, RealtimeClientV2/
ConnectionManager default removal, global deletion) will land in a
follow-up PR.
