chore: make the module build and lint cleanly standalone

Adds a self-replace so the github.com/manyminds/api2go import paths the fork
keeps resolve when building the module by itself, bumps gin to match the router
adapter, and drops the unused gorillamux and echo adapters together with their
tests. Silences the ginkgo release-candidate notice and resolves every
golangci-lint finding so the CI test job passes.
