docs: add dedicated section for Project.defaultProfile (Fixes #9556) (#9561)

* docs: add dedicated section for Project.defaultProfile configuration

Add a new 'Default Profiles' section to the Projects documentation with:
- Explanation of how defaultProfile works (auto-applies to resources without meta.profile)
- JSON configuration example with multiple resource types
- TypeScript code example showing automatic profile application
- Use cases (clinical data quality, multi-tenant, gradual adoption)
- Notes on behavior (applied before validation, multiple profiles per type)

Also update self-hosting/project-settings.md to cross-reference the new section.

- Move clinical data quality note into opening paragraph
- Remove inaccurate 'When to Use defaultProfile' section
- Multi-tenant and gradual adoption points removed per reviewer feedback
