Switch gRPC detection to AST and modernize the file walk

The gRPC type scan read the source one line at a time; it now reads the AST via syntaxgo, so gofmt and protoc spacing changes stop breaking it.
Merge the three repeated scans into one shared func that takes a match predicate.
WalkFiles adopts the tree walk that skips a stat on each file, and drops the file-info argument that nothing used.
Trim the doc comments and bump the CI action versions.
