Harden kratos service sync and cut log noise

- Sort service methods across each struct, not just the first
- Rewrite mangled protobuf type refs in generated services
- Stage regenerated services in a system temp path
- Quiet the trace logs unless the debug flag is on
- Add tests covering the mask-suffix and import-fix logic
- Bump deps and switch to zaplog MustNewLog
- Align release workflow actions with the template
