refactor(matchers): minor simplifications

- Collapse the manual key-collect-and-sort in parseMatchers to
  slices.Sorted(maps.Keys(query)).
- Allocate SubscriptionPayloads once in resolveSubscriptionPayloads instead of
  in both branches.

No behavior change.
