fix(matchers): address Copilot review comments

- Reject all control characters and invalid UTF-8 in the event id and type
  fields (not only CR/LF/NUL), matching the topic/matcher rules and keeping
  unsafe bytes out of the Last-Event-ID header.
- Point the demo UI "IRI" help link at RFC 3987 (IRIs) instead of RFC 4622.
- Fix a URI Template variable typo in a test ("fistname" -> "firstname").
