test: add streaming backpressure stress tests

Adds stress tests for AbstractBatchEntityReaderStream and
AbstractBatchEntityWriterStream that validate backpressure
handling under high-volume data processing (100,000 entities).

- Reader stress test processes 100,000 entities with a slow
consumer (1ms delay per batch) to validate backpressure
- Writer stress test writes 100,000 entities with simulated
200ms slow database writes per batch
- ResourceMonitor utility tracks CPU and memory usage at
100ms intervals during test execution
- Tests validate processing completes within 120 seconds
with resource usage below thresholds (CPU < 80%, memory < 120MB)
- Stress tests are excluded from default test run via
testPathIgnorePatterns and run with npm run test:stress
- CI workflow includes a dedicated performance-tests job
that runs stress tests after coverage finalization
