coverage: link the installed OpenSSL archive in the kcov test build

scripts/coverage.sh compiles the test binary with raw `zig test`,
outside the build graph, so nothing linked the vendored OpenSSL and CI
died on undefined symbols. `zig build` now installs the archive
(zig-out/lib/libopenssl.a) and the coverage build links it by path.
Raw `zig test src/root.zig` is retired for test filtering too:
`zig build test -Dtest-filter=...` replaces it (CLAUDE.md updated).
