fix(ci): fetch full git history in QA workflow so server reports real version (#2263)

The Dockerfile bakes .git into the image for hatch-vcs version detection,
but the workflow's shallow, tag-less checkout meant the built server always
reported version 0.1.dev1+<hash>, which failed flexmeasures-client's
minimum-server-version check. Matches the fetch-depth: 0 already used in
docker-publish.yml for the same reason.
