fix(orgs): normalize legacy meta names and fix on-chain name field

- Add `case string` to multilingualFromAny so orgs with a plain-string
  meta["name"] (written before this branch) still emit a top-level
  name/logo/description field in the response.
- In OrganizationFromDB, upgrade any plain-string values for the three
  well-known keys to MultilingualText so meta.name and the top-level name
  field always agree on {default: "..."} format.
- Add OrgDisplayName helper that extracts meta["name"]["default"] with a
  fallback to the org address.
- Use OrgDisplayName in both CreateOrgAccount call-sites (createOrganization
  and createManagedOrganization) so the on-chain name field carries the
  actual org name instead of the hex address.
