feat(bb_display): add bb_display_set_mirror for panel mirror control (#665)

- add bb_display_set_mirror(mx,my) public api + optional backend vtable slot
- wire ili9341, st7789, st7735 backends via esp_lcd_panel_mirror
- document rotation/mirror composition ordering (set_mirror after set_rotation)
- return bb_err_unsupported when the active backend has no mirror support
- host tests for both axes, single-axis order, and rotation-after-mirror reset
