Add comprehensive unit test coverage for UserFromAttributes

- Implement mocked/stubbed LDAP queries using RSpec doubles to isolate unit tests from external LDAP servers and network/VPN.
- Add test coverage for both user creation and update pathways under missing or present CAS token attributes.
- Handle error-handling/edge cases where LDAP returns nil or a record without a university ID.
- Verify fallback behavior of alternate_value when token names are missing.
- Ensure existing user attributes (like given_name) are not overwritten unnecessarily.
