docs: point client example at examples/server, not a third-party lib

The client example told readers to dial "some proxy listener e.g.
github.com/mailgun/proxyproto" — a separate third-party library. This
repo ships its own PROXY-aware server, so point at examples/server
instead. Same wording in README.md and examples/client.
