ci: skip Coveralls on macOS runners

The coverallsapp/github-action installs its coveralls binary via a
Homebrew tap on macOS. The macos-26-arm64 runner image ships a newer
Homebrew that refuses untrusted third-party taps, failing the step:

  Refusing to load formula coverallsapp/coveralls/coveralls from
  untrusted tap coverallsapp/coveralls.

Coverage is identical across OSes, so gate Coveralls to Linux only,
matching the existing CodeClimate step. The macOS matrix legs still run
the full test suite; they just skip the coverage upload.
