Fix shell snippets breaking with hyphenated command names

Replace hyphens with double underscores in function/variable identifiers
across all shell snippet generators so that commands like `example-multi`
produce valid identifiers (e.g. `_example__multi_completer` instead of
`_example-multi_completer`). The raw command name is preserved for
registration and invocation where it is used as a string argument.

Affected shells: PowerShell, bash, bash-ble, fish, oil, nushell, xonsh
(multi-completer only), zsh, cmd-clink.
