fix: process payload data for 2 mqtt events (#588)

* fix: process payload data for change-charge-mode and climatisation-completed events

Observed when monitoring mqtt bus for a while with an Enyaq active.
Both service events were silently dropping their data fields by falling
back to the bare ServiceEventData base class.

* feat: add handling for change-charge-mode and climatisation-completed events

Handle change-charge-mode the same as change-soc
Add seperate handler for climatisation-completed
Simplify _on_mqtt_event to keep linter happy

* fix: overlay climatisation-completed event state onto AC data when newer

* fix: process review remarks

* fix: apply time_to_finish to AC object

* fix: process review suggestions
