* fix(review): suppress mp3 video preview, close test/doc gaps

- server: do not feed audio-only .mp3 output into the gr.Video preview
  component (it cannot render an audio stream); leave the preview empty and
  rely on the download slot.
- README: list --video-codec mp3 in the service_client CLI options.
- tests: cover the primary mp3 path (processed audioNew.wav with non-neutral
  speeds), assert trim forwarding to build_audio_only_command, verify server
  emits a .mp3 download with a suppressed video slot, and drop a brittle
  redundant assertion in test_ffmpeg.
