docs: use VS Code marketplace icon for Mintlify branding

Replace text-only FT SVG navbar logos and favicon with the same PNG
used by the VS Code extension listing. Point docs.json at logo/icon.png
and favicon.png, remove the old light/dark SVG assets, and document
sync from packages/vscode-forst/images/marketplace-icon.png.
