Commit Message

Migrate demo1kratos and demo2kratos onto kratos v3 with the buf toolchain.

- Switch import paths from v2 onto v3 across each demo
- Move logging onto stdlib slog in each demo
- Regenerate proto outputs through buf: go, grpc, http v3, errors v3, openapi
- Keep annotation-based generation so the demos keep shipping generated helpers from the errors annotations
- Trim vendored protos down to the errors annotation; google protos come from the buf registries
- Bump action versions in the release workflow onto the newest tags
- Upgrade module dependencies
