migrate to kratos v3 and drop kratos-zap

- bump go-kratos to v3.0.0 (from v2.9.2)
- swap the kratos log types to stdlib slog
- demos and test now build the slog via kratos defaults
- go.mod drops kratos-zap, since no source imports it
- regen pb.go so the http codegen skips the removed binding import
- swap grpc DialInsecure to NewClient (v3 unified the client setup)
- fix the Makefile generate paths and the http plugin to v3
- align CI workflow with template: checkout v7, upload-artifact v7, action-gh-release v3
