fix(typing): reject dataclass/TypedDict as Key value_type

Key's value_type doubles as the (str) -> T formatter applied to a single matched substring, so a dataclass/TypedDict can't be built from it. Reject it at construction with a clear error pointing to Matches.to(...). mypy clean, 180 tests passing on both backends.
