docs: remove invalid Mintlify codeblocks theme

Mintlify rejects `"theme": "system"` inside the `styling.codeblocks`
object; `"system"` is only valid when `codeblocks` is a string. Custom
grammars use the object form with `languages.custom` only.

Example:
