chore: standardize agent skill and instruction files (#95)

## Description

Standardize the repo's agent-facing files: rely on OpenCode's native
`.agents/skills` discovery, give skills clear verb-based names, mark
them manual-only, and trim markup/versions from the instruction files to
reduce tokens.

### Updated

- Renamed skills to `<verb>-<service>-<xyz>` (e.g. `dbt-model` →
`add-dbt-model`), updating `name:` frontmatter and `.claude/skills`
symlinks
- Marked all skills manual-only via
`disable-model-invocation`/`user-invocable` plus a "do not invoke
automatically" description prefix
- Stripped bold/italic/blockquote markup and pinned package versions
from every `AGENTS.md` and `SKILL.md`; trimmed each Technology Stack to
2-3 high-level packages

### Deleted

- Removed the non-standard `skills.paths` block from `opencode.json`
(`.agents/skills` is auto-discovered)
