Add demo reset cron: purge bookings, reseed, restore config

- purge-bookings.sh: wipes all bookings/PII, resets admin credentials
  from .env, seeds ~600 example bookings across a 4-week window, and
  restores the Paddy's Pub config snapshot. Runs every 2 hours via crontab.
- config-snapshot.sql: canonical restaurant/section/table/brand config.
  Email settings intentionally omitted — no credentials in source control.
- Dockerfile: bake sqlite3 into the backend image so the cron script
  survives container rebuilds without a runtime apt-get install.
