Trust the Coveralls Homebrew tap on macOS to fix CI (#358) (#359)

* Make Coveralls upload non-fatal to fix macOS CI (#358)

The macOS runner's Homebrew now refuses to load the coveralls formula
from an untrusted tap, failing the Coveralls Parallel step. With
fail-fast: true that one failure cancelled the rest of the matrix.
Coverage reporting should never fail the build, so mark the step
continue-on-error.

Pre-trust the coverallsapp/coveralls tap before the Coveralls action
runs its 'brew install coveralls', so the upload succeeds on macOS
rather than being suppressed.
