fix: cancel undrained response bodies and bump @dcl core-components/core-libs deps

No undrained undici response-body leaks were found in the source: there are
no HTTP fetch sites (no fetch.fetch/native fetch/node-fetch/LRU fetchMethod);
the LiveKit adapter uses the WebSocket-based SDK, not undici. Only the @dcl
dependency bump applies.

- Bump @dcl/http-server ^2.0.2 -> ^2.1.0 and refresh yarn.lock (2.0.3 -> 2.1.0)

Typecheck (tsc --noEmit) and lint pass; all 83 unit tests pass.
