feat: update Matomo directives and components to Signal inputs

BREAKING CHANGE: Matomo directives and components now use Signal inputs: `MatomoTrackClickDirective`, `MatomoTrackerDirective`, `TrackFormFieldDirective`, `TrackFormSubmitDirective`, `TrackFormDirective` and `MatomoOptOutFormComponent`. This should not affect most applications. If necessary, please update your application and/or tests to account for this change.
