Migrate EmbeddingServer test fixtures to v1beta1test (#5579)

EmbeddingServer test fixtures repeat the same ObjectMeta + Model/Image/Port
boilerplate across the controller, integration, and e2e tests. Route them
through the v1beta1test.NewEmbeddingServer builder (added in #5576) to remove
the duplication with no behavior change.

Builder defaults (Model/Image/Port=8080) match the dominant literal values;
non-default values pin via WithEmbedding* options, and fields without a
dedicated option use MutateEmbedding. Single-field getter unit tests (GetPort,
GetReplicas, IsModelCacheEnabled, GetImagePullPolicy) and empty Get/decode
targets stay inline by design. No assertions or test logic changed.
