Align the update site's Eclipse repository reference to 4.39 (#648)

`edu.cuny.hunter.hybridize.updatesite/category.xml` pinned its Eclipse
`repository-reference` to 4.25, while `hybridize.target` and the feature's
discovery URL moved to 4.39 (commit afabff33). A p2 reference to an older
Eclipse stream than the target can pull older platform units at install
time. Match the target's URL (https, 4.39).

Update the stale Eclipse 4.25 mention in `CLAUDE.md` to 4.39 as well.
