fix: leave legend boxes uncolored under gradient; clarify color docs

A gradient colors points by value, so SeriesColors no longer leaks into
the legend boxes when a gradient is active (they were showing colors not
in the plot). Also corrected the rgbToAnsi256 doc re: dark grays and the
SeriesColorGradient doc re: legend behavior.
