chore: migrate tooling to just and refresh docs and CI (#159)

* build: adopt just, dprint, cargo-deny and git-cliff tooling

Replace scripts/cargo.sh with a just-based command runner (Justfile + just/
recipes for build, test, code checks, publish and changelog). Add dprint as the
formatter of record (Markdown, TOML, YAML and Rust via nightly rustfmt) and
reformat the repo accordingly. Add cargo-deny (deny.toml) for advisory, license,
ban and source policy, and git-cliff (cliff.toml) for changelog generation from
conventional commits. Add a rust-toolchain.toml and a .githooks/pre-commit gate
(trufflehog + dprint + cargo-deny) installable via 'just setup_githooks'.

* ci: consolidate workflows into a single just-driven pipeline

Collapse test.yml, all-features.yml and cli.yml into one ci.yml that extracts
the toolchain channel from rust-toolchain.toml and runs fmt (dprint), clippy,
test with coverage, build, doc and cargo-deny via just. Add a zizmor workflow to
audit GitHub Actions, harden all workflows (least-privilege permissions,
persist-credentials false, feature values passed via env) and bump pinned
action SHAs to their latest stable releases.

* docs: refresh README, add AI policy and align contributor docs

Drop the dead rust-ftp comparison in favour of a features overview, fix stale
cargo feature names and version pins in the examples, correct the CI badges and
remove the donation section. Add AI_POLICY.md and reference it from CONTRIBUTING
and the pull request template. Point contributor docs at the just workflow and
git-cliff-generated changelog instead of the old scripts and manual entries.
