docs: fix broken hosted-docs links in README

The docs are deployed under a /main/ subdirectory (doc.yml
destination_dir: main), so the bare /pytest-libiio/ paths 404. Add the
missing /main/ segment to both the hosted-documentation link and the
coverage-tracking link.
