Cross-platform bootstrap installer (#35)

* Refactor pyproject.toml: Update license format and remove briefcase configuration

Refactored 1,136-line monolithic bootstrap_installer.py into a maintainable
package structure with 7 modules (platform, python, venv, shortcuts, state,
ui). Addresses PR #35 code review feedback about excessive file size.

Changes:
- Created vi_installer/ package (renamed from 'installer' to avoid PyPI conflict)
- Extracted platform-specific logic to platform.py (93 lines)
- Extracted Python discovery to python.py (228 lines)
- Extracted venv management to venv.py (92 lines)
- Extracted shortcut creation to shortcuts.py (122 lines)
- Extracted state management to state.py (166 lines)
- Extracted UI/orchestration to ui.py (643 lines)
- Converted bootstrap_installer.py to thin wrapper (25 lines)
