replace hyphen in yaml keys with underscore for env vars (#119)

#### Description

Hypens in environment variables are not POSIX compliant. This commit
allows the user to override hyphenated keys by using underscores. Now
the environment variable MY_KEY=newvalue overrides a yaml of my-key:
originalvalue.
